Spinach & Feta Cheese Pie

This dish is a firm favorite with friends and family. Feta cheese, spinach & puff pastry makes a winning combination. You may prepare this dish, as hors d'oeuvres or a main dish. Making little pastries are attractive, but takes more time than simply baking a large pie.

So these days I just sandwich the filling between layers of pastry, bake and then slice them in convenient sizes. Nobody seems to mind as it is all eaten up in no time. It can be made very quickly and conveniently with ready-made puff pastry or by making your own pastry very economically.

When making your own pastry, ensure that the butter is cold & hard. When I grate the butter into the flour, I usually coat the stick of butter with flour. That way, it is better to handle the butter without it slipping and it does not get soft as easily. You also have better control of the butter. Repeat the dipping when necessary. It also helps if you keep the grater in the fridge until it feels cold.

Please note: If you have a food processor, just cut the butter, coat in flour, then pulse in food processor. The setting should be Pulse.

Add the other ingredients until dough forms a kind of rough ball. Remove, place on board, be generous with sprinkling flour on rolling pin as well. Follow directions below.

Should you wish to make smaller pies, simply adjust the recipe for your use.


  • 1½ pounds frozen spinach
  • ¼ cup chopped onion
  • 2-3 cups crumbled feta cheese
  • ¼tsp. salt
  • 3 tsp. crushed garlic
  • 3 tblsps. Olive oil

Method for Spinach & Feta

  • Thaw spinach. Use a colander to drain water from thawing spinach
  • Heat oil. Sauté onion, & garlic for a few seconds
  • Add spinach, cook on high temperature for 3-5 minutes
  • Stir contents occasionally to prevent burning. Lower temperature.
  • Add salt. Since Feta Cheese is salty, a limited amount of salt is used
  • It is done when there is no liquid left in the pot.
  • When cool add crumbled feta cheese to spinach & mix. Test for salt and adjust to your taste. Keep aside

Pastry Ingredients

  • 3 cups all purpose flour,(I also use wholewheat flour on occasion)
  • 3 sticks cold butter
  • 1 tblsps. Cider Vinegar
  • 3/4 cup milk

Method for Making Pastry & Assembling Pie

  • Sift flour in a large bowl. Take 1 stick of butter at a time, dip in flour to coat
  • Grate butter into the flour. This prevents the butter from absorbing the heat from your hand and becoming soft.
  • Toss the grated butter into flour with a fork
  • Sprinkle cider vinegar & gradually add milk to mix
  • Using a fork, toss all ingredients to form a ball. Towards the end, use your hands to deftly form a rectangle shape.
  • You may also sprinkle board & rolling pin with flour, and without too much of pressure, shape dough
  • Divide dough into 2 balls, one slightly larger than the other. Wrap with cling wrap. Refrigerate for 45min-60min. or until dough feels firm
  • Sprinkle flour on a board. Roll the larger ball of dough to approx. " thick to fit a 9"x 13" baking dish. Be gentle with the dough and not roll very hard
  • As the dough softens it becomes more pliable and will yield to the required shape and texture. Sprinkle flour if necessary
  • Apply a dab of olive oil to a baking pan. Then place rolled dough in pan. Roll the smaller ball the same way to form the top of the pie. Keep aside
  • Fill the dough in dish with the spinach & feta mix. Spread the contents uniformly
  • Cover with the second rolled dough. Adjust edges to fold dough
  • Lightly cut a few slits in dough. Sprinkle with milk & bake in a 375° oven for approximately 30-35minutes or until the top is golden brown
  • Remove from oven. Allow to cool, then slice. Get ready for rave reviews. I usually serve this with a citrus salad to balance the rich taste of the pastry

For beautiful spiral rounds, shape dough into rectangle, add spinach filling, in one row, about 2" from edge, then roll. Freeze or refrigerate, if using in a short time. When dough is firm, slice & bake. Serve with drinks.
