Quick, Easy Roti-Vegan

This is a very simple roti recipe that works well and is very quick to make. In about 35 minutes you can have 5 fresh, soft, warm rotis. This recipe can be doubled or tripled very successfully. I used just oil as I was creating a vegan roti, but you can choose to use butter or ghee in similar amounts that oil has been used.

My son Shyam, who had been using this recipe, suggested a resting time of about 10 min., after the dough has been made. He found the dough to be more manageable. I tried that and agree that the dough is easier to work with after the resting time.

Here is the recipe.




Ingredients

  • 1 cup all purpose flour
  • About ½ cup extra all purpose flour for filling and spreading on board
  • 2 tblsps.oil & a little more for applying on roti while cooking
  • ½ tsp. salt or to taste
  • Almost ½ cup of boiling water. You may not use it all, so do not pour it all at once

Method

  • Combine 1 cup flour and salt
  • Add 2 tablespoons oil and mix
  • Follow with about ½ cup of boiling water. Use a spoon to mix, as the dough will be very hot. Do not add all the water at once, mix ingredients
  • When the dough is less hot, use your hands to knead. Try forming a ball. If the dough feels dry, add more water. a little at a time, continuing to knead, until you get a smooth ball of dough that is soft and pliable.
  • Kneading does help to allow air which increases the rising and even cooking
  • Cover and let the dough rest for about 10 minutes
  • Form into 5 balls.
  • *This tip is optional. Make a hollow in the ball and add about ½ tsp. of flour. Now enclose the flour in the dough. Shape into a ball
  • Roll on board. Sprinkle flour on board to avoid the dough sticking
  • Cook on tava/pan. Apply a little oil on roti top and press on one edge to encourage the dough to rise
  • Turn and cook the other side
  • Remove from heat and place on a plate
  • Start the next roti until all are cooked
  • Serve with your favorite accompaniment. Enjoy

About this Roti

*I learned this tip from a family member, Shobha, who has also contributed several recipes. Add just a small amount of flour in the hollow of one piece of dough, then enclose and form a little ball before rolling.

It is supposed to help the roti to rise. It works well with most types of flours. Do try this tip.

This vegan roti is not just nice tasting and very quick to make, it is also healthy for you as there is very little fat used. Canola oil is regarded as one of those good for you oils. Here is a link if you would like to find out more about the benefits of, canola oil.

If you do not have Canola Oil where you live, just use the oil that you generally use or look for a “good for you oil” in stores near you.
