Mealie Meal Roti

A reader requested a recipe for mealie meal rotis. I had never made it myself but had enjoyed eating it on several ocassions.

A cousin helped me with this recipe. I tried the recipe which worked out very well. We enjoyed the rotis, served with a spinach chutney, for dinner.

I have since learned that some cooks add a tablespoon of butter to the dough. This is optional. I made it with no butter or oil and was pleased with the results. Here is the recipe.

Ingredients

  • 1 cup mealie meal
  • salt to taste
  • 2 cups boling water
  • 1 ¼ cups flour, (approximately)

Method

  • Boil water and add salt. Add mealie meal. after a few seconds mix the contents and lower heat
  • Stir ocasionally to ensure it does not burn
  • Remove a small amount and test the grains. If it feels very hard, add a bit more water, until you get a soft dough
  • Remove from stove. When cool, add the flour to this mealie meal dough to form a pliable dough
  • Do not add the flour all at once. Add small amounts at a time. As you knead, you can add more flour
  • Form into balls. Roll on board. Sprinkle flour generously, to avoid the dough sticking
  • Cook on tava/pan. I did not use any butter or oil. It is meant to be a dry roti
  • Turn and cook the other side and press to encourage roti to rise
  • Serve with curries. Enjoy

This roti is delicious and yet does not contain oil or butter. If you would like to add butter, use a tablespoon of melted butter or ghee at the stage when you mix the dough.
